Fast, filling and crisply fresh:
- 8 eggs
- 200 g feta cheese
- 200 g sour cream
- 200 ml cream
- 1 piece red pepper
- 1 piece yellow pepper
- 1 piece small onion
- salt, pepper, nutmeg, a little margarine, garlic and herbs to taste
Whisk the eggs with the sour cream, cream and spices, clean and chop up the peppers and onion.
Put a little margarine in the pan and heat it up. Once the correct frying temperature has been reached, sauté the onion, peppers and garlic, if applicable.
Put the egg mixture on top and let it thicken.
Sprinkle with herbs and crumbled feta, fold it over and finish cooking.
Eggs are a valuable foodstuff. They contain lots of vitamins and minerals. The most valuable is protein. With nearly 8g per egg, it covers 15% of an adult’s daily requirement. Eggs from organic or Demeter/biodynamic farming have a more valuable nutrient composition than eggs from conventional factory farming.
Do not put any food into the pan before the right frying temperature has been reached.
You can ascertain the correct frying temperature by putting a small knob of butter in the pan. Once it has melted, the butter starts to froth vigorously. When this effect subsides, the correct frying temperature has been reached.
